Love me some fish. Dining in or dining out, it’s usually my first choice.  After a week of too much dining out, I was craving a simple, light meal. Happily Dorothy Lane Market had some beautiful, fresh sole available at a price that didn’t break the bank.

After rinsing and patting dry, slather a bit of Dijon mustard to the fillets, then dredge in a mixture of panko bread crumbs and minced parsley. Season to taste. The mustard adds a nice flavor kick while the panko gives the fish a satisfyingly crunchy coating. Fry in a hot skillet in olive oil for just a couple of minutes on each side until the crust is golden brown. Serve over pan roasted asparagus with lemon zest.

Amazing how a good meal does the soul good.
